Beat the San Diego Heat – EASY Summer Popsicles!

Fruit PopsiclesHere in San Diego, August can be brutally hot and humid, especially as you move away from the coast!  Running that AC is expensive and energy intensive – it can be tough to find ways to cool down!  Easy, pretty and fun to make, popsicles are the perfect refreshing treat. Here are a few recipes (with 3 steps or less!) to make for the kiddos and some options for the adults as well (just make sure to remember which frozen treats are which)!  Perfect for BBQs, picnics, San Diego beach days and just hanging out at home in the backyard, these will liven up – and cool down – any afternoon!

 

 

 

Raspberry Popsicles!

Ingredients:

2 1/2 cups of raspberries (fresh or frozen)

1 cup raspberry fruit drink (such as Welch’s or Ocean Spray)

2 tablespoons light corn syrup or creme de cassis(for the adults)

 

Directions:

1. Puree 1 1/2 cup raspberries, raspberry juice, and corn syrup/creme de cassis until smooth. Fold in remaining cup of raspberries.

2. Pour into popsicle molds or paper cups.

3. Freeze until firm, 3 hours.

 

Watermelon Lime Popsicles!

Ingredients:

2 cups chopped and seeded watermelon

2 Tbsp honey

Juice from two limes

 

Directions:

1. Blend all ingredients together

2. Pour into molds and freeze!

 

Adult Lemon Popsicles!

Ingredients:

1/3 cup lemon juice

1/4 cup sugar

1 cup pale ale

 

Directions:

1. Mix ingredients together; stir until sugar has dissolved.

2. Pour into molds and freeze, about 6 hours.
