Rancho Santa Fe Local Produce: Recipe of the Day!

rancho santa fe local produce recipeHere in Rancho Santa Fe, we are fortunate to be able to grow produce – or buy it from local farmer’s markets – all year round.  But summer produce is always the best and most bountiful!  So go out to your garden, or visit one of our  wonderful local farmer’s markets, both in and near Rancho Santa Fe (see our earlier post on San Diego Farmer’s Markets for a list of markets near Rancho Santa Fe!) and find out what’s in season!


Usually around this time of year, we find ourselves swimming in squash.  One of my favorite squash recipes is below – make as much or as little  as you’d like, use as a main dish or a side dish!  It’s quick, easy and delicious (and, incidentally though not by design, vegan and gluten-free).


Hawkes Squash and Tomatoes


A few ripe squash (zucchini, crookneck, pattypan, summer squash, or whatever you can find)

One whole medium-sized red onion

Two cloves garlic

Two cans diced tomatoes

1/4 tsp Red pepper flakes (or more, to your liking)

Salt and pepper to taste

Grated cheese (cheddar, parmesan, or another sharp cheese)


Slice your squash relatively thinly (about 1/8 inch slices) and put in a 2-quart saucepan.  Slice onion and garlic; add to squash.  Pour tomatoes over squash and onions.  Cook over medium heat until squash becomes soft and onions are almost translucent.  Add red pepper flakes; season with salt and pepper to taste (consider adding fresh herbs as well if you have them; parsley, cilantro, chives, a small amount of thyme or dill would all be nice additions).  Serve in bowls; garnish with cheese before serving.
