San Diego Local Produce Recipe: Kebab Marinade!

OLYMPUS DIGITAL CAMERAOur San Diego local produce is through the roof these days, with zucchini and other summer squashes abundant and tomatoes just starting to come into season.  One of my favorite things to make with summer produce is kebabs!  Perfect for throwing on the barbecue, bringing to a picnic or just as a summer snack! Because our San Diego local produce is so fresh and plentiful, I like to make my kebabs with just veggies from the garden, but you can add shrimp, chicken or beef as well!  I usually use zucchini, red onion, bell peppers and tomatoes, but you could add mushrooms, pineapple, mango, eggplant, tofu, or whatever sounds good to you! Try this recipe for a lovely summer kebab marinade!

 

1/2 cup olive oil
1/2 cup lemon or lime juice
1/4 cup water
1/4 cup Dijon mustard
2 tablespoons maple syrup
2 tablespoons minced garlic
2 tablespoons chopped fresh basil leaves
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Whisk together all ingredients in a small bowl. The marinade can be prepared in advance and held covered in the refrigerator for up to 7 days.

 

Chop vegetables into bite-sized chunks and place in a deep dish. Pour marinade over vegetables.  Cover and refrigerate for 2 hours.  Remove, drain marinade (but save for basting and, if no meat was involved, dipping!), and thread veggies onto skewers.  Cook on a medium hot grill until veggies are slightly charred all over, around 10 minutes.
